Hank’s Mystery Meat Shack began in 1998 with one grill, one cleaver and a supplier agreement consisting entirely of Hank pointing at the horizon. The Shack has since become a landmark for drivers who believe provenance is a private matter between a chef and whatever chased him back to the van.
Hank personally sources every special. This has taken him from frozen tundra to tropical swamp, dense rainforest and stretches of ocean where even the maps become evasive. Availability depends on weather, migration patterns and whether Hank won.
The menu changes without warning. Regulars recommend ordering by cooking method rather than species and avoiding any dish described as ‘still ambitious’. All meals arrive with slaw, beans and a firm assurance that the kitchen removed the difficult parts.
